I have the same question. I have uploaded the .WebPart file in a page but I can see where I will change the Microsoft stock to another stock.

I think I have found how to chnage it. I have open the .webpart file before upload on SP and search and replace MSFT by the one I wanted.

Upload it and voilà !

I'm not sure to understand your question.

This field is not available in the sharepoint interface. You have to make a find and replace in the .webpart file directly.

The replacement is on the line 17.

Hope it help
